Ready in under an hour
- 140g softened butter (and some for tin)
- 2 large eggs – beaten
- 140g caster sugar
- 140g self-raising flour
- 2 very ripe bananas – mashed
- 1 tsp baking powder
- Set your oven to 180ºC (160ºC fan-assisted)
- Take a 2lb loaf tin, butter and line the tin.
- Cream butter and sugar until light.
- Slowly add eggs and a little flour.
- Fold in the rest of the ingredients.
- Bake for approximately 30 minutes.
