Banana bread

  • 140g softened butter (and some for tin)
  • 2 large eggs – beaten
  • 140g caster sugar
  • 140g self-raising flour
  • 2 very ripe bananas – mashed
  • 1 tsp baking powder

  • Set your oven to 180ºC (160ºC fan-assisted)
  • Take a 2lb loaf tin, butter and line the tin.
  • Cream butter and sugar until light.
  • Slowly add eggs and a little flour.
  • Fold in the rest of the ingredients.
  • Bake for approximately 30 minutes.
