Chicken Curry

Sauce
- 2 tsp olive oil
- 2 level tbsp curry powder
- 1 level tbsp cornflower
- 1 level tbsp tomato purée
- 2 tbsp mango chutney
- 1 tbsp lemon juice
- 3 tsp sugar
- Sprinkle of ground ginger
- Sprinkle of cinnamon powder
- 3⁄4 pint chicken stock
The rest
- 5 chicken breasts
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- mushrooms
- 1 small tin of pineapple pieces

- Mix the sauce ingredients together and leave to simmer for 25 to 30 minutes.
- Dice the chicken, and brown in a frying pan
- Slice vegetables and add to the chicken.
- Add pineapple pieces and cook for 25 minutes.
- Add the cooked ingredients to your sauce.
